Chicken, Sweet Potatoe and Black Bean Soup

My sister is one of the best cooks. She can put just about anything together and make it taste phenomenal. She loves to make different types of soups and stews for my mom, complimenting the meal with side salad and a warm whole grain roll. YUM!
INGREDIENTS
3 skinless chicken breasts cooked and shredded
2 large sweet potatoes, peeled and cut into bite sized cubes
15 oz can of fire roasted diced tomatoes
15 oz can of black beans, low sodium, drained and rinsed
4 cups of chicken or vegetable broth – low sodium
2 Tbsp olive oil
1 onion diced
1 tsp of smoked paprika
salt and pepper to taste
chopped fresh cilantro for garnish
INSTRUCTIONS
- Saute onions and olive oil in a large pot until soft
- Add chicken or vegetable broth, black beans, canned tomatoes, paprika, salt and pepper. Bring to boil
- Reduce stove temperature to low. Add sweet potatoes. Simmer until potatoes are tender.
- Use a potato masher to mash potatoes and beans, a few times to thicken. Do not mash completely. Leave some potatoes and beans whole.
- Add chicken. Heat just until warmed through.
- Serve in your favorite dish.
- Garnish with fresh cilantro.

3-4 people
PREP TIME
45 minutes. Prepare chicken in advance will cut prep time on day of preparing meal.

30 – 45 minutes
