Southwest Superfood Salad

This simple salad includes low carb quinoa with healthy ingredients that result in a sweet and savory combination that is very satisfying, either as a main dish with added protein of your choice or a versatile side. Great for picnics and potlucks.
INGREDIENTS
½ cup dry quinoa
½ red onion, chopped
1 orange, peeled and chopped
1 avocado, peeled and chopped
1 cup of black beans, rinsed
1 cup corn kernels
⅓ cup cilantro, chopped
Salt and pepper
2 limes, juiced
2 tsp garlic, minced
½ tsp cumin
1 teaspoon honey
6 Tbsp olive oil
Salt and pepper
INSTRUCTIONS
- Cook quinoa according to package directions.
- Combine all salad ingredients, seasoning to taste with salt and pepper.
- Combine vinaigrette ingredients in a separate bowl and whisk together, seasoning to taste with salt and pepper.
- Pour vinaigrette over salad ingredients and stir to combine.
- Serve chilled or at room temperature.
